For the apple & cucumber sandwiches
100g soft cream cheese
¼ bunch chives, cut finely
¼ bunch flat leaf parsley, chopped finely
½ a lemon, juice only
1 apple, core removed, sliced
¼ cucumber, finely sliced
½ thin baguette, halved horizontally
Today we're making three classic British sandwiches for our picnic. The sandwiches can very well be taken along on a day trip or to school, in the lunch box. Our youngest mini-monsters are okay with the egg salad but they like to swap the salmon / cream cheese and the apple / cucumber. They like Nutella sanwiches best on a picnic. That is of course also possible :)))
How to make the apple & cucumber sandwiches
Stir the herbs into the cream cheese.
Juice the lemon.
Peel and slice the apple.
Stir the lemon juice into the apple.
Fold the apple into the cream cheese.
Cut the baguette lenghtwise.
Place the cucumber slices on the bread.
Spread the apple / cream cheese mixture on the other half of the bread
Press both halves together.
Cut the bread into four sandwiches.
How to make the smoked salmon & cream cheese sandwiches
100g soft cream cheese
½ spring or red onion, finely chopped
1 tablespoon capers, drained & chopped
4 slices smoked salmon
4 slices wholemeal bread
For the egg & pickle sandwiches
3 free-range organic eggs, hard-boiled, peeled
3 tablespoons mayonnaise
1 tablespoon pickle, drained, finely chopped
1 spring onion, finely chopped
sea salt and freshly ground black pepper
handful mixed salad leaves
4 slices white bread
How to make the salmon & cream cheese sandwich
Cut the bread in squares, without crust.
Finely cut the onion, add to the cream cheese.
Chop the drained capers finely.
Stir both into the cream cheese
Spread the cream cheese on the bread.
Put the salmon on top.
Cover with bread, cut it diagonal.
Two sandwiches done, only one to go ...
How to make an egg salad & pickle sandwich
Cut four thin slices of bread.
Boil the eggs hard.
Chop the eggs coarsely.
Chop the onion and pickle finely.
Stir together with the mayonnaise.
Cover the bread with salad leaves.
Spoon the egg salad on top.
Cover with a second slice of bread then cut it
The sandwiches are ready, we take some into the garden to taste ;)) Happy Sunday!
