125g butter (room temperature)
125g fine sugar
1 teaspoon vanilla extract
2 free range eggs (room temperature)
3 tablespoons milk (room temperature)
125g self-raising flour
There is no greater pleasure to do for our mini monsters than a tin full of freshly baked vanilla cupcakes. It's almost no effort, they are so easy to make and quickly ready. Moreover, you can decorate them in all kinds of ways, you can make a fun cupcake for every occasion ;))
How to make our delicious basic vanilla cupcakes
Preheat the oven to 180°c and place the rack in the middle of the oven
Place the butter in a bowl, add the sugar and vanilla sugar. Mix butter and sugar on medium speed fluffy.
Keep mixing then add the eggs one by one, gradually sift in the flour then add the milk. Mix one more minute.
Put paper cases in a cupcake tin and fill them up to 2/3 with batter.
Slide the tin into the oven, bake for 20 - 25 minutes then allow the cakes to cool completely in the tin.
TIPS!
- Open the oven door when the cupcakes are almost ready or they may collapse!
- Push a skewer into the cupcake to see if they are cooked inside.
- When the cupcakes have completely cooled you can decorate or eat them plain.
