1.5 kilos of chicken wings / legs
For the marinade
1 chilli
25 ml of soy sauce
25 ml of a clear honey
25 grams brown sugar
5 grams fennel seeds
5 grams of thyme (dried)

5 grams of cayenne pepper
5 grams of all spice powder
2.5 grams of ginger powder
2 garlic cloves (chopped)
4 onions (chopped)
25 ml apple juice
25 ml orange juice
25 ml lime juice
The Caribbean chicken wings from this recipe are hot, which is not good for the little ones or maybe you don't like hot yourself. Leave out the pepper and they are just delicious chicken bones, the mini monsters also like them very much.
How to make Caribbean Chicken Wings
On day 1 you make the mainade
Mix in a food processor or a blender until smooth.
Save 100 ml marinade in a container in the fridge, for later.
Place the chicken in a bowl and pour the remaining marinade over it.
Cover the bowl with cling film and place it overnight in the refrigerator.
Day 2
Preheat the oven to 175°C and cover the baking tray with waxed paper.
Spread the marinated chicken wings on the tray and bake the chicken for 20 minutes.
- Bring the marinade from the fridge in a saucepan to the boil and reduce it to 1/3 in app. 10 minutes.
- Take the chicken wings out of the oven and brush the wings with the thickened marinade.
- Set the oven to 200°C and bake the chicken wings for another 20 minutes until cooked.
