Shopping list for 6 muffins
110g plain flour
110g butter
65g fine caster sugar
2 free range eggs
1½ teaspoon baking powder
1 sachet vanilla sugar
optional
125g blueberries
1 tablespoon honey

Muffins with blueberry sidell

Today we bake American Blueberry Muffins. In the United States, muffins are often eaten for breakfast, usually out with a coffee to go. We bake them at home, which is easy and very tasty!

How to make Blueberry Muffins
Stir the flour, the vanilla sugar and the baking powder until combined and put aside.

Preheat the oven to 200°C

Mix butter and sugar creamy.

Mix in the eggs one by one.

Fold the flour into the batter.

Stir until all is well combined.

Place the batter in a clean bowl and cover the bowl with cling film.

Place the bowl preferably overnight in the fridge.

Place paper cases in a muffin tin.

Fill the paper cases up to 2/3 with a scoop.

Bake the muffins 25 min. in the middle of the oven.

Let the muffins cool in the baking tin on a wire rack.

Place them on a plate to cool completely.

Purée the berries with the honey in a blender.

Make a hole in the muffins and fill it with the purée.

The muffins taste delicious, with or without blueberries.
