for the sugar syrup
425 g caster sugar
500 ml of water
1 vanilla pod, scrapings
1½ tablespoon of lemon juice
for the jelly
900g of ripe strawberries
7 gelatin leaves
Making our mini-monsters happy is easy, buy a pack of Jello and they are very happy indeed. The beautiful, bright transparent colours, the wobbly consistency and the sweet taste is all delicious! But with all the artificial colors, fragrances and flavours it contains, is healthy of course something completely different! (which is not to say that we don't use it exceptionally) So here today is our homemade, healthier version of strawberry jelly ;))
How to make strawberry jelly
First make the sugar syrup
Place sugar and water in a saucepan.
Add the vanilla scrapings and stir it in.
Put the pan on low heat, let the sugar dissolve.
Remove the pan from the heat and add the lemon juice.
Stir it in then allow the syrup to cool.
Pour the syrup into a jar you can close.
Put the jar in the fridge for later use.
How to make the jelly
Wash, drain and remove the hulls from the strawberries.
Bring the strawberries in 570 ml syrup to the boil, let simmer for 10 mins.
Soak the gelatin until soft while the strawberries cool slightly.
Rub the strawberry mixture through a fine-meshed sieve.
Stir the soft gelatine into the hot jelly until dissolved.
Pour the jelly into closable jars or into moulds.
Place the jelly overnight in the refrigerator to set.
The jars we bring to our picnic.

NB Because it is very difficult to remove the jellies from the mould we froze them first!
