400g strawberries
200ml fresh whipped cream
250g mascarpone
6 tablespoons fine sugar
1 orange
150g ladyfingers
Baking tin 12 x 20cm
A real Father's Day dessert from Italy, a crossing between a cake and ice cream? Of course! We make a Strawberry & Cream Semifreddo for (grand) Dad. Don't forget, you have to take this dessert out of the freezer 2 hours before you want to eat it, then you can easily lift it out of the mold by the foil.
How to make a Strawberry & Cream Semifreddo
Wash the strawberries.
Cut them into slices, set ± 5 aside.
Sprinkle on 2 tablespoons sugar.
Mix the sugar gently in.
Set the strawberries aside for 15 minutes
Cover a mold in cling film.
Juice the orange.
Let the strawberries drain.
Collect the strawberry juice in a bowl
Whip the cream with 2 tablespoons sugar.
Mix until soft peaks appear.
Add the mascarpone, gently fold it in.
Mix until the mixture is smooth and airy.
Add the orange juice to the strawberry juice.
Add 2 tablespoons of sugar and 50 ml water.
Stir and soak the lady fingers in it.
Place the lady fingers in the mold,
Cover them with the cream mixture.
Top with a layer of strawberries.
Repeat until the mold is full.
Spread a layer of cream on top.
Smoothen the top layer.
Place the remaining strawberries on top.
Pull up the cling film all around and cover the semifreddo with it
Place the semifreddo in the freezer for at least 3 hrs, preferably overnight.
Remove the semifreddo from the freezer 2 hours before serving.
