Shopping list
1 small shallot, chopped finely
15 grams butter
3 small sheets of puff pastry
flour, to dust
1 free range egg
50 ml single cream, light
50 gram Cheshire cheese, crumbled
1/2 tablespoon chives, cut finely
1/2 tablespoon flat parsley, cut finely
baking spray
These mini quiches - the savoury dish to go with the Alice tea - are in the original recipe made with Cheshire cheese. Very witty! Because the name of the cheese refers to the Cheshire cat from the Alice in Wonderland story.
To bad we could not find this cheese in nl so we used the cheddar / mozzarella mix again. But do not hesitate to try and find it, we'd love to hear from you if you succeed!
How to make 9 mini quiches with cheese and fresh herbs
Fry the shallot until soft in the 15g butter.
Dust your workspace with flour, cut circles out of the pastry.
Grease the mini muffin mold with baking spray.
Press the circles into the holes of the muffin tin.
Preheat the oven to 200°C
Beat the egg, mix in the cream and onion.
Stir in the finely chopped herbs.
Fill the pastry cases up to the rim.
Bake the quiches golden in 12-15 minutes.
Allow the quiches to cool in the mold, then on a rack.
Maybe it's in the name, but the quiches disappear just as quickly as the Cheshire cat and we have a smile on our face! ;)
