170g ground almonds

Today we make really quick and simple Amaretti. We make these most delicious Italian biscuits using Gino D'acampo's recipe to go with espresso or tea. We make them for Mum because this Sunday it is Mothers Day!
How to make Amaretti Biscuits
Preheat the oven to 170°C
Separate the yolks from the egg whites.
Beat the egg whites stiff.
Gradually add the sugar.
Then gradually add the ground almonds.
Stop mixing and gently stir the dough.
Now fold in the Amaretto as well.
Line the baking tray with parchment.
Place small heaps of dough on the parchment app. 2 cm apart.
Slide the baking tray in the middle of the oven.
The biscuits will expand in the oven to approximately twice the size.
Take the biscuits after 120-15 minutes from the oven.
Let the cookies cool on a wire rack.
Lovely, crisp on the outside, chewy on the inside!
