For 8 Buns
480g self raising flour
1 teaspoon kosher salt
1 teaspoon sugar
90g butter, cubed
+/- 200 ml cold milk 200g country ham (or your favorite type of ham)
Pineapple Sauce
250-500g fresh pineapple, cubed
1 tablespoon dijon mustard
1 tablespoon brown sugar
To serve
250g cheese (to your taste)
250g farmers ham (or your favorite ham)
We bake our own sandwiches (biscuits) which are served with ham, cheese and pineapple sauce. In the United States the sandwiches are called biscuits and they are usually eaten with 2 deep fried chicken legs. Then you order 2 piece and a biscuit :)) We are not a fan of biscuits with deep fried chicken, so these biscuits are much more to our taste. We make half a recipe, for lunch.
How to make these American Biscuits
Preheat the oven to 200°C / 220°C Fan, place baking paper on the baking tray
Mix the first 3 ingredients together.
Add the butter cubes to the flour mixture.
Mix until it resembles grains the size of rice.
Slowly add the milk and mix it in.
Then a dough will form.
Knead it briefly by hand.
Roll it to a thickness of 2.5cm.
Cut biscuits of 2.5cm thickness.
Place the biscuits on the baking tray.
Bake in +/- 15 minutes light golden.
Allow the biscuits to cool.
While the biscuits cool you make the pineapple sauce
Cut the pineapple finely.
Put in a pan with mustard and water.
Bring the pineapple close to a boil.
Turn the heat low and allow the mixture to simmer for 5 minutes
Cut the biscuits open and top with cheese and ham.
Spoon pineapple sauce on the biscuits and serve open or closed.
