1 kg floury potatoes
125g lean bacon cubes
300g finely chopped organic endive
2 tablespoons butter
45 ml buttermilk
salt and freshly ground pepper
Gran's endive stamppot was made with raw endive, grandma believed in healthy fresh vegetables on your plate. Now we know that a pesticide was probably sprayed on, so we eat organic endive. You can't wash off agricultural poison.
Speaking of washing, organic endive must be washed very well, it sometimes contains a snail or worm, for example, and often sand. But well washed it is very tasty! We buy organic fruit and vegetables at Rechtstreex.
How to make raw andive stamppot
Peel and wash the potatoes
Place them half under water in a large pan.
Sprinkle with a little salt, if you like.
Bring the water to a rolling boil.
Turn the heat low and place the lid on the pan.
After +/- 20 minutes of gentle cooking, the potatoes will be done. In the meantime, prepare the endive and fry the bacon
First wash the andive whole, so you lose the soil
Cut the andive into thin strips.
Wash the andive strips once more.
Let it drain really well.
How to fry the bacon
Preheat the pan.
Fry the bacon in it's own fat.
Fry the bacon until it is crispy.
Steam the potatoes dry in a minute.
Stamp them coarsely, using a stamper.
Add the bacon to the pan.
Add the buttermilk and the butter as well.
Fold it all gently until combined
Finally fold in parts the andive in.
Season the andive stamppot to taste with salt and pepper.
