100g soaked raisins
50g butter
50g stale breadcrumbs
100g caster sugar
6 Elstar apples
1 teaspoon cinnamon
half a lemon, juice and zest
1 roll fresh puff pastry
icing sugar, to dust
Every year on June 15th, Apfelstrudel Day is celebrated in Austria. Duh, very important! You might think, but for Austrians it is. Because also in Germany and in Switzerland too, apfelstrudel is eaten, but the original recipe really comes from Austria and the Austrians are very proud of this.
Today we are making an apfelstrudel with this Austrian recipe for dad. Because Apfelstrudel Day in Austria is Father's Day here this year. Moreover, we are doing dad and granddad a big favor with apple pie. We put a lot of apple and raisins in it and then the apfelstrudel is generously sprinkled with icing sugar. Delicious, we love it too!
How to make an Apfelstrudel
Soak the raisins for 15 minutes in warm water.
Peel the apples thinly, remove the cores and stems.
Cut the appels ino slices and place the in a large bowl.
Toss the apples withthe lemon juice and add the sugar as well.
Add the cinnamon.
Also add the lemon zest to the apples.
Finally stir the drained raisins into the mixture.
Preheat the oven to 200°C and place waxed paper on the baking tray
Roll the puff pastry on baking paper.
Divide breadcrumbs and filling over the dough.
Roll the dough and tuck in the ends securely.
Melt the butter on low heat.
Brush the butter over the strudel.
Bake the strudel for 45 minutes.
Let cool on a wire rack.
Sprinkle the Apfelstrudel generously with icing sugar.
Cut the simple pastry into thick slices and serve it with coffee and/or tea.
