- 150 gram flour
- 10 g baking powder
- pinch of salt
- 50 grams melted butter
- 40 grams of sugar
- 120 ml of milk
- 2 free-range eggs
- one teaspoon cinnamon
- 2 Elstar apples
- 100 grams fudge
Delicious muffins for autumn, apple toffee muffins! Very quick and simple to make, bigger kids bake them all by themselves, with a watchful eye of course. The smaller children can help too and then we eat them till the last crumbs. That's how delicious they are!
Place sugar and milk in a large bowl, add the eggs.
Let the butter melt slowly.
Mix it electrically until the mixture is frothy.
Measure and weigh the dry ingredients.
Sieve them all together into the mixture.
Stir everything together quickly.
Peel the apples then cube them.
Preheat the oven to 190°C.
Use a cupcake tray filled with paper cupcake cases.
Fill the ramekins with a a layer batter then apple cubes.
Chop the soft fudge in small pieces.
Divide the fudge over the apple in the muffin.
Cover the muffins cases with a layer of batter.
Place the baking tin 25 to 30 minutes in the middle of the oven.
When the muffins are golden and well risen get them out of the oven.
Let the muffins cool on a wire rack. Eat them hot or cold.
