Apple Pancakes

an Autumn treat
With apples, Autumn, and Pan Cakes

Shopping list
240g flour
2 tablespoons light brown sugar
1 teaspoon baking powder
a pinch of salt
240ml whole milk
1 free-range organic egg (L)
1 medium apple, grated
1 tablespoon unsalted butter + extra
To serve: maple syrup

It's fall and we're baking pancakes with apple, because apples are best in October. The pancake recipe is American, they are baked three in one go in the frying pan. That works really fast and when they are baked we keep them warm in the oven. No Dutch stroop to go with them but Maple Syrup!

How to bake apple pancakes

Put flour, sugar, baking powder and salt into a large bowl.

Stir it all together until well combined.

In another bowl measure the milk, add the egg and vanilla.

Beat it together until the mixture is light and frothy.

Peel and core the apple.

 Cut the apple into 4 parts and grate it coarsely.

Stir the milk mixture into the flour mixture.

Please Note: The batter should have some small to medium lumps; don’t over-mix or try to stir them smooth!

This is what the batter looks like.

Add the apple to the batter.

Gently fold the apple in .

Melt a knob of butter in the pan.

Bake the pancakes for 1 - 2 minutes, until little bubbles appear on top and then flip them over and fry the other side 1 - 1.5 minutes

Preheat the oven to 100°C and place a plate in it

Put batter in the pan with an ice cream scoop.

Fry the pancakes until golden brown.

Keep the pancakes warm in the oven.

Remove the apple pancakes from the oven when the batter is gone.

Servethe pancakes immediately, with maple syrup to taste.
