125g butter (room temperature)
125g caster sugar
1 free-range organic egg (small)
1 teaspoon of vanilla extract
300g (Zeeland) flour
1/2 teaspoon baking powder
fondant icing, in various colours
For a little birthday boy who loves cars, we bake these colourful biscuits. We already know that they will be a big surprise for him and especially after we dug up this old cookie tin from the attic. :)) It will make the bake even more special to him.
With the cookie cutters from Koek-it we can't go wrong, we have a classic Beetle (Volkswagen), a just as classic Dafje (DAF) and the version of a race car, in cookie shape.
How to make the car biscuits
Make the dough from the recipe and put it in the fridge for an hour
Fetch the dough and knead it briefly by hand.
Dust your workspace generously with flour.
Flatten the dough and roll it out to 1/2cm thickness.
Divide the dough into 3 pieces and cut out the 3 car types.
Cut out Beetles and Dafs first, and place on a baking tray with waxed paper..
Cover the cars, place in the fridge for 30 minutes.
Bak the biscuits for 10-12 minutes, or until the edges colour golden.
Preheat the oven to 175°C
While the biscuits cool completely you cut out the icing
Cut out little Daf's in multiple coulors..
Stick them onto the biscuits with a drop of water.
Cut out various colours of Beetles.
Stick the fondant icing on the biscuits.
Cut out the windows and stick them on.
Cut out wheels and stick them on the cars.

Bake racing cars from the last part of the dough
Cut out the race cars.
Bake them in 12-15 minutes.
Let the cars cool completely.
Stick on the fondant icing.
Stick on the racing cars windows and wheels as well.
We cannot wait for the Birthday Boy to see all these cars!
