200g non-fat cottage cheese
half an avocado
juice of 1/2 a lemon
12 cherry tomatoes
15g flat parsley
a pinch sea salt
freshly ground black pepper to taste
a few leaves of lettuce

This vegetarian sandwich spread is made quickly and it's very tasty. The fresh taste combines perfectly with home baked focaccia. In the sun at a picnic for example. Too delicious, fresh, healthy and no calories! What more do you want? Fresh veg from Rechtstreex! :D
How to make avocado spread
Cut the avocado in half and remove the stone.
Put the cottage cheese in a bowl and add the avocado pulp.
Juice a lemon and add the juice to the bowl as well.
Cut the tomatoes in fours and chop the parsley.
Spoon the avocado spread in a freezer box and put it in the fridge until you leave.
Cut the bread in half, then in triangles, cut them open and put on lettuce.
Spoon avocado spread on the bread, it has no calories so it fits perfectly in every diet.
Cover the spread with the bread again. Next time we make a fish salad for a change.
Now all you need for a picnic in the sunshine is fruit water for the kids and tasty white wine!
