4 slices of white bread
8 slices of streaky bacon
50ml beer
1 teaspoon mustard
1 teaspoon Worcestershire sauce
2 tablespoons plain flour
sea salt and black pepper, to taste
optional: a dash of Tabasco sauce
Today is the day, we make bacon rarebit with yesterday's apple chutney. We are looking forward to this, because although we have been to England many times, we have never eaten rarebit. For the kids we only replace the cheddar half by young Gouda and we leave the tabasco out.
How to make Bacon Rarebit
Place the bacon onto an oven tray and grill for 4-6 minutes.
Heat cheese and beer gently, until the cheese has melted.
Stir in mustard and brown sauce, then stir in the flour
Cook until just thickened, season with salt and black pepper.
Toast the bread and lay it on an oven tray covered in waxed paper.
Top with two slices of bacon and spoon the rarebit mixture on it.
Grill the sandwiches 2-3 minutes or until the cheese is golden.
Now get the apple chutney ...
Serve the rarebit with a generous dollop of apple chutney.
