Shopping list
1 tablespoon olive oil
100 grams smoked bacon strips
2 spring onions
500 grams Brussels sprouts, cleaned
50 grams dried cranberries
bag of mixed lettuce leaves
100ml sherry
50 grams walnuts or pecan nuts, lightly toasted
For the dressing
3 tablespoons walnut oil
2 tablespoons wine vinega
1 teaspoon honey
½ teaspoon mustard
Another great recipe by The Hairy Bikers is this Bacon & Sprout salad. This salad looks very festive with the shiny red cranberries on top, just the ticket for the Christmas Holidays too. You can eat it warm or cold and it is really lovely, with the tangy flavour of the cranberries.
How to make a Bacon & Sprouts Salad
Slice the clean sprouts thinly.
Wash and cut the spring onions in slices.
Heat the tablespoon olive oil.
Fry the bacond strips in it.
Fry the onion with the bacon in the last minutes
Fry until the bacon is crispy.
Let drain on kitchen paper.
Pour the sherry into a saucepan.
Add the cranberries to it.
Bring them to a boil.
The liquid will be absorbed.
Put the sprouts in the frying pan.
Fry the sprouts until the edges turn brown.
Chop the nuts coarsly.
How to make the dressing
Put oil, vinegar and honey in a bowl.
Add the mustard to the dressing and season it.
Beat the dressing until all is well combined.
Place the salad leaves on a platter and top with sprouts.
Drizzle half of the dressing over the salad and toss it gently, serve the rest separately
Sprinkle with the bacon and onions, then berries on top.
Finally sprinkle the nuts over the Bacon & Sprouts Salad.
