The Apple Cake
200g plain flour
100 ml lukewarm milk
10g dried yeast
50g hard butter, cut in thin slices
a pinch salt
2 free-range organic eggs
50g raisins
1-2 apples, cut into cubes
icing sugar
After reading the funny old-fashioned picture book The Apple Cake, we also want to have a taste of that delicious Appel cake. It is very nice that the recipe is printed on the back of the book. We first read the picture book out loud to the little monsters and then try some of the Apple Cake.

How to make THE Apple Cake
Please mind! We use Dove's Farm yeast that should be stirred into the flour, instead of dissolved in warm milk!
We need the milk anyway so we warm it on the stove.
We sift the flour (with the yeast) in a large bowl.
Make a well in the center of the flour for the milk.
Stir a moment until it's a limp dough.
Place the butter on top and sprinkle with salt.
Set the dough aside in room temperature.
Let the dough rest for a minimum of 20 minutes
Meanwhile grease the tin and dust it with flour.
Beat the eggs and vanilla into the dough for 5 minutes.
Wash, core and peel the apples.
Cut the apples into small cubes.
Fold the apple and raisins into the batter.
Cover the batter again.
Allow it to rise in a warm spot.
It will take about 1.5 to 2 hours for the batter to double in volume
Spoon the risen batter into the baking tin.
Let the batter rise a moment, until it is puffed.
Bake the apple cake on the bottom shelf of the oven.
Bake the apple cake for 25- 30 minutes, until golden.
Turn off the oven and let the apple cake rest for 5 minutes in the baking tin in the oven
Then let the Apple Cake cool completely on a rack.
