285g plain flour
1 teaspoon bicarbonate of soda
½ teaspoon of salt
1 teaspoon vanilla extract
110g butter
225g caster sugar
2 free range eggs
4 ripe bananas, mashed
85ml milk
1½ teaspoon lemon juice
Banana bread, lovely to take on a picnic tomorrow we thougt. But...this banana bread tastes so good! The mini-monsters eat it to the last crumb as soon as it is baked. Try to grab a slice yourself, it tastes delicious! ;)
How to make Banana Bread
Weigh the flour, soda and salt.
Sift it together into a bowl.
Mix the butter and sugar light and fluffy.
Add the eggs and mix.
Add the milk and the vanilla extract as well.
Preheat the oven to 180°C
Mash the bananas with a fork.
Swiftly mix the banana into the batter.
Fold lemon juice and flour into the batter.
Grease a 20 cm loaf tin.
Pour the batter in the tin.
The tin will be 2/3 full.
Bake the bread for about 1 hour.
Let the bread cool slightly in the tin, then on a wire rack.
Cut the banana bread in sturdy slices and serve it with a cup of tea.
