140g whole meal
2 teaspoons baking powder
50g demerara sugar
1 free range organic egg
50g melted butter, cooled
125ml almond milk
2 ripe bananas, 1 sliced, 1 mashed
150g white chocolate chunks
1 tablespoon lemon juice
Today we are baking 2 types of banana muffins at the same time. For the littlest monsters we are making muffins with banana, but without pieces of white chocolate. For our older monsters we are making the same banana muffins but with chocolate. The muffins are both very yummy!
How to make these banana muffins
Place paper cases in a muffin baking mold.
Stir flour, sugar, baking powder and a of pinch salt.
In the mixing bowl beat egg, butter and milk 20 seconds.
Stir flour and mashed banana into the mixture.
Preheat the oven to 190 ° C.
Stir 90g chocolate in half the batter.
Spoon both batters in the muffin molds.
Bake the muffins for 18-20 minutes.
Allow to cool in the mold.
The unfilled muffins are ready.
Melt the remaining chocolate.
Spread it on the chocolate muffins.
Toss the banana slices in the lemon juice.
Stick the banana slices on the not completely dried chocolate.
