1 small onion, chopped
2 garlic cloves, crushed
2 tablespoons olive oil
1 red chilli, finely chopped
dash of chilli flakes
55g soft dark brown sugar
50ml dark soy sauce
300ml tomato ketchup
sea salt & ground pepper
It's almost Fathers Day! How nice for Dad if he does not have to barbecue himself but it is done for him. First we make this firm, spicy barbecue sauce.
Heat the olive oil in a frying pan.
Fry onion and garlic soft.
Add the sugar, chili and flakes.
Stir in the soy sauce.
Stir in the tomato ketchup as well.
Let the sauce simmer a few minutes, check on salt & pepper.
The sauce is delicious on burgers or sausages but is also very tasty when used to coat spare ribs or chicken. So coat the Father's Day chicken wings already and place the bowl overnight in the refrigerator.
