125g plain flour
1 teaspoon baking powder
1 tablespoon caster sugar
150 ml whole milk
2 free-range organic eggs, separated
40g unsalted butter, melted
1 teaspoon vanilla extract
salt to taste
100g organic streaky bacon
maple syrup, to taste
For our Christmas breakfast we bake Belgian waffles, delicious and savory with crispy fried bacon and sweet, with maple syrup. It's not a lot of work because we have an electric waffle iron and we love making waffles. And these Belgian waffles are really the best!
How to make Belgian waffles
Turn the oven on low heat and heat the plates
Sift sugar, baking powder and flour in a bowl and stir it.
Separate the eggs, use the yolks now, set the whites aside.
Whisk the egg yolks, whisk in the vanilla and melted butter.
Make a well in the flour and pour in the egg mixture.
Whisk it all together until it is smooth.
Beat the egg whites with a pinch of salt.
Beat the egg whites firm but not stiff.
Fold the egg whites into the batter until just mixed, but don't mix too long!
Heat your waffle iron as the manufacturer prescribes
Grease the iron sparingly with baking spray.
Spoon 2-3 tablespoons batter into the iron.
Close the iron and bake for the indicated time.
The waffles are done when they are golden brown.
Keep the waffles warm in the oven while you bake the rest of the batter

Fry the bacon strips in their own fat.
Fry the bacon until it is crispy.
Drain the bacon on kitchen paper
Place the bacon on the plate with the waffles.
Serve maple syrup on the side, so everyone can have to taste.
