700g cream cheese (room temperature)
50g caster sugar
300g of white chocolate
250ml double cream
500g of fresh fruit
100g of biscuits
This time of year we like to use fresh strawberries, raspberries and blueberries. They taste really good in combination with the white chocolate and they look beatiful on your cake. Today we make a cheesecake without baking - super handy to make with the kids - with lots of fresh summer fruit.
How to make a summer fruit cheesecake
Start with melting the chocolate au bain marie and let it cool.
Line a 25 cm baking tin with cling film.
Ladle the cream cheese into a big bowl.
Add cream and sugar to the cream cheese and mix it fluffy.
Stir the lukewarm chocolate smooth.
Add the chocolate to the cream cheese.
Mix it quickly together until it's combined.
Fill the cake tin up to 1/3 with the cream cheese mixture.
Scoop 250 gram washed fruits onto the bottom layer.
Cover the tin with the remaining mixture, smoothen the top.
Press the cookies in the top layer, they make the base.
Cover the baking tin with cling film.
Place the cheesecake overnight in the fridge.
Cover the cake tin with a fitting plate.
Flip the tin in one movement over.
Take the tin off and remove the cling film carefully.
Place the remaining fruit on top of the cheesecake and it's ready!
