Flower biscuits

Shopping list
85g fine sugar
140g butter, in cubes
2 free range yolks/ 2 egg whites
1 teaspoon vanilla extract
250g flour + extra to dust
1 teaspoon baking powder
edible pansies
some sugar
pastel coloured icing fondant
optional: glitter powder

For Mother's Day you want to make something special, like these beautiful biscuits. Edible flowers are hot and therefore expensive, you buy them at the vegetable store, not at the florist. You must be sure that the flowers are not sprayed. A good reason to grow violets in the garden or on the balcony. That saves and you enjoy them longer :)

How to make the flower biscuits

Mix the butter with the sugar creamy.

Add the egg and vanilla.

Mix until combined.

Mix in flour & baking powder.

Knead quickly by hand.

Wrap the dough in cling film.

Put the dough app. 1 hour in the fridge.

Roll the dough to 1cm thicknes.

Cut out the biscuits.

Place them on baking paper.

Place the biscuits 1 hour in the fridge.

Preheat the oven to 170°C

Bake the biscuits for 12-15 minutes.

Meanwhile roll fondant icing thinly.

Cut out pastel coloured flowers.

You can brush the flowers thinly with egg white then sprinkle fine sugar on for a frosted look.

Stick the icing with a drop of honey on the biscuits.

Place the flowers on the biscuits and serve immediately!
