3 free range organic egg whites
190g fine sugar
90g almond flour
flaked almonds
apricot jam, to taste
75g dark chocolate
Mocha buttercream
50ml water
150g granulated sugar
2 free-range organic eggs, M
200g butter, room temperature
mocha extract to taste
Today we're making one of our Mum's favorite biscuits: bokkenpootjes! Goat's feet are almond biscuits, just like weespermoppen and bitterkoekjes (Dutch macaroons). The recipe is very easy, there is usually a layer of apricot jam between the biscuits and the ends are dipped in chocolate. Very tasty!
How to make bokkenpootjes (Goat's Feet)
Preheat the oven to 180°C and place baking paper on the baking tray
Separate the egg whites and put them in the mixer.
Beat the egg whites and gradually add 100g sugar.
Stir the remaining sugar into the almond flour and add it.
Fold the almond flour mixture into the firm egg whites.
Spoon the goat's feet batter into a piping bag with a round tip
Pipe stripes of app. 6 cm on the tray.
Sprinkle almond flakes on the biscuits.
Bake the biscuits in the middle of the oven.
Bake them in 15 minutews light brown.
Cool 5 minutes on the baking tray.
Then completely on a wire rack.
Spread apricot jam on one half.
Press a second biscuit on top.
Melt the chocolate au bain marie.
Remove from the heat then stir it.
Dip the goats feet into the chocolate and let it set.
Delicious with coffee or tea!
