40g plain flour
¼ teaspoon baking powder
120g icing sugar
45g almond flour
4 free range eggs
65g butter
+/- 50g blackberries
extra butter, to grease
extra icing sugar, to dust
Now that we have picked such beautiful blackberries, we want to make something delicious with them, for Michaelmas. We choose little French cakes, Financiers, they call them in France. Gluten and lactose free, so everyone can eat them with us. We've made them before with raspberries and they tasted very good! This time we make them with our blackberries.
How to make French blackberry Financiers
Weigh flour and baking powder.
Sieve into a bowl.
Sift in the icing sugar.
Sift the almond flour in too.
Stir until combined.
Separate the eggs.
Add the egg whites to the flour mixture.
Preheat the oven to 170°C and melt the butter on the hob, on low heat.
Beat the egg whites into the flour until well combined.
When the butter starts to brown beat it into the batter.
Fill the greased molds, place on waxed paper on a baking tray.
Bake the financiers in 12-15 minutes golden brown.
Allow the finaciers to firstly cool in the molds on a wire rack.
Then tap the cakes from the molds and allow to cool completely.
Dust the financiers sparingly with some icing sugar.
The finaciers taste extra delicious with these lovely sweet blacberries!
