Shopping list for 12 muffins
100g unsalted butter, softened
65g caster sugar
65g light brown sugar
2 large organic eggs, room temperature
125g organic yogurt
1 teaspoon vanilla extract
5 tablespoons milk
250g self-raising flour
1 teaspoon baking powder
200g blackberries (fresh or frozen)
We bake blackberry muffins for Michaelmas tomorrow, we make half a recipe, because 12 muffins is too much for us. Afterwards we regret it a bit, these muffins are very tasty! Next year we will bake 24 ><
How to make blackberry muffins
Beat butter and sugar for 5 minutes.
Add the eggs 1 by 1.
Add the vanilla as well.
Beat in the yogurt as well.
Then add the milk as well.
Fold in self-raising flour and baking powder.
Fold until you have a nice, smooth batter.
Add the blackberries to the batter.
Gently fold in the blackberries.
Scoop the batter in the baking in.
Bake the muffins for 8 minutes.
Let the muffins cool slightly in the baking tin.
With coffee and tea (or milk) on the side, those muffins are yummie!
