250g caster sugar
40 ml sunflower oil
50g hazelnuts
50g sesame seeds
20g poppy seeds
30g pumpkin seeds
30g dried mango
Today we are guests in Lithuania and we make Riesutu ir seklu karameliniai. For variation we eat sweet caramel candy with mango, nuts and seeds in it. The recipe comes from Oditele's Blogas.
It is an old fashioned sweet that Oditele, the writer of this blog, in her childhood in winter during school lunch hour ate. She rembers it fondly. There are a lot more delicious recipes on her blog, but only in Lithuanian ;)
How to make Riesutu ir seklu karameliniai
The preparation
Weigh all ingredients and put them within easy reach.
Chop the dried mango into little pieces.
Crack the hazelnuts and chop them too.
Spread the sugar on the bottom of a pan.
Put the sugar on low heat and let it melt. Add the oil when most sugar has dissolved and has caramelized. Stir and remove the pan from the heat. Careful! The sugar burns quickly now.
Right now the oil is added to the caramelized sugar.
Stir the oil firmly into the sugar with a wooden spoon.
Add mango, nuts and seeds to the mixture and stir.
Spoon the content of the pan on a sheet of waxed paper.
Cover with another sheet and roll it out to your liking.
Let the candy cool completely before you cut it into pieces.
If you prefer you can cut the candy in shapes.
