500g beef, in cubes
piece of butter
sea salt & freshly ground pepper
1 onion
2 carrots
1 clove of garlic, crushed
1 bay leaf and a sprig of thyme
1 teaspoon mustard
½ tablespoon brown sugar
37 cl Belgian Gueuze beer
3 Speculoos biscuits, finely crumbled
a few sprigs of flat parsley, cut finely
The Carbonade Flamande is a delicious Flemish beef dish, stewed in a Belgian beer. A hearty Belgian stew with fresh onions and carrots is delicious in the cold winter months. We bake fresh French fries - after the Flemish example - and that's what the mini-monsters do love, French fries! They'll take a pass on the stew, but that doesn't matter, we'll serve the mini-monsters peas and apple sauce with the fries. We are just happy we can include the beer ;))
How to make Carbonade Flamande
Cut the meat into coarse cubes.
Melt the butter on medium heat.
When it browns add the beef.
Chop the onion coarsly.
Add the salt, pepper and sliced onion.
Cut the carrots in slices.
Add the carrots to the beef as well.
Stir in the mustard and the soft brown sugar
Add the laurel leaf, thyme and garlic.
Allow it all to fry a bit.
Then pour in the beer.
Stir it, cover the pan with the lid.
- Depending on the type of beef you use the carbonade-flamande has to stew softly for 1.5 to 2.5 hours
- You have to check the stew regularly and add a little beer or water if needed
- Spoon the Carbonade Flamande into a bowl and thicken the gravy by stirring the Speculoos crumbs into the gravy
Serve the Flamish Stew in a bowl and sprinkle with parsley.
Serve the Carbonade Flamande with freshly baked French Fries.
