1 roll ready made puff pastry
2 pears, peeled and cut into cubes
200ml double cream
30 grams of sugar
2 free-range organic eggs
1 teaspoon of vanilla extract
75g Tony's dark chocolate,

Allow the chocolate to set.

Place the pear tarts in the refrigerator for at least 1 hour so the chocolate can set.
