1 roll ready made puff pastry
2 pears, peeled and cut into cubes
200ml double cream
30 grams of sugar
2 free-range organic eggs
1 teaspoon of vanilla extract
75g Tony's dark chocolate,
keep a small piece to decorate
Pears and dark chocolate, the best combination there is and if whipped cream is added, we are happy! The mini Pear Tarts are great for the Sugar Festival. But also just on the weekend, if you want to make a quick treat to go with your coffee. Do pay close attention otherwise they are all are gone, our mini-monsters also like the Pear Tarts very much!
How to make 30 mini Pear Tarts with Chocolate
Preheat the oven to 200°C
Beat the cream with the eggs, sugar and vanilla until frothy.
Meanwhile cut circles out of the puff pastry, we made thirty.
Press the circles in the baking mold, we have to bake twice.
Fill the pastry cases with pear cubes but not too much.
The cream mixture is now ready.
Spoon it over the pear cubes.
Slide the mold into the middle of the oven.
Bake the pear tarts in 15 - 20 minutes golden
Melt the chocolate au bain marie.
Allow the tarts to cool in the mold.
Spoon chocolate in the center.
Allow the chocolate to set.
Place the pear tarts in the refrigerator for at least 1 hour so the chocolate can set.
Grate the small piece of chocolate, sprinkle it on the tarts.
The pear tarts with chocolate taste great with a strong cup of coffee.
