For 2 Club Sandwiches
fresh salad leaves
2 free range organic eggs
1 red onion
1 large tomato or several small ones
6 slices bacon
thinly sliced pork
6 slices bread, toasted
For the sauce
3 tablespoons mustard mayonnaise
1 teaspoon honey, 1 teaspoon soy sauce
1 teaspoon lime juice
sea salt & freshly ground black pepper
What do we have in the fridge today? We always have lettuce, tomatoes, eggs & mustard mayonnaise and today there is also leftover bacon and a piece of leftover roast pork fillet roulade. Our decision is quickly made, we clean out the refrigerator and at the same time we prepare a lovely Sunday lunch :)) It will be club sandwiches!
How to make the Club Sandwiches
The preparations
Boil the eggs until hard, in 7 minutes.
Slice onion and tomato thinly.
Thinly slice the pork.
Fry the bacon crispy.
How to make the sauce and assemble the sandwiches
Toast the bread, to taste.
Stir all the sauce ingredients until combined.
Slice 1: sauce, salad, onion rings, tomato then bacon.
Slice 2: sauce, thinly sliced pork and a sliced egg.
Put slice 3, spread with sauce, on top.
Enjoy!
