6 whole wheat sandwiches, toasted
3 tablespoons semi-skimmed mayonnaise
½ lemon, zest plus a squeeze of juice
sea salt & black pepper, to taste
red outing. shredded
2 cocktal tomatoes, sliced
3 sweet&sour pickles, sliced
200 grams smoked salmon fillet, torn
handful of mixed lettuce leaves
some chives
sprigs of dill
optional: 2 free range organic eggs
It's Sunday and we have no plans at all. That doesn't happen often. There is plenty of time for an leisurely lunch...but what will we have? We make a club sandwich - a super easy one - but very tasty!
How to make a club sandwich
Toast the bread and then make lemon mayonnaise
Measure 3 tablespoons of mayonnaise.
Squeeze in some lemon juice, to taste.
Mix lemon and zest with the mayonnaise.
Spread 4 of the toasted slices of bread with the lemon mayonnaise and set aside for a moment
Boil 2 eggs hard, in 7 minutes.
Chop the onions.
Cut the tomato into slices.
Cut the pickles in the same way.
How to assemble the Club Sandwich
Spread mayo over the toast.
Top the toast with lettuce and onion.
Cover with tomato slices.
Cover with another toast with mayo.
Spread the toast generously with pickles and top with smoked salmon
Sprinkle the salmon with chive shavings.
Cover with the last piece of toast and cut the sandwich in half.
Secure the club sandwich with wooden skewers and serve with lettuce, a lemon slice, some dill, sliced tomato and egg, enjoy!
