450g plain flour, from the mill
165g caster sugar
1½ teaspoons baking powder
1 teaspoon baking soda
a dash salt
1 free-range organic egg
75 ml of vegetable oil
225 ml fresh orange juice
200g fresh cranberries
100g walnuts
Healthy and delicious is this home baked cranberry-walnut bread. Once you've tasted it this bread will often be baked in the new year!
How to bake a Cranberry / Walnut Bread
Wash the cranberries, chop the cranberries and the walnuts into pieces and juice the oranges until you have 200 ml.
Put the flour into a big bowl, add the sugar, salt, baking powder and baking soda to it and stir until it is combined.
Preheat the oven to 175°C
Beat the egg, add the oil and the orange juice to it and mix until all is combined. Then mix in the flour as well.
Stir the cranberries and the walnuts into the bread dough by hand.
Grease the baking tin, spoon the dough into the tin until it filled for 2/3 and bake the bread for 55 minutes.
Cool the bread 5 minutes in the tin then cool completely on a rack. Serve the bread with butter or cream cheese.
