125g Zeeland flour
75g butter (room temperature)
75g fine sugar
1/3 free-range organic egg, beaten (room temp.)
½ teaspoon of vanilla essence
½ teaspoon of baking powder
100g icing sugar
1 teaspoon lemon juice
+/- 2 - 3 tablespoons water
green food colouring
black and a small piece pink fondant icing
Beat butter and sugar until creamy.
Whisk the egg.
Add 1/3 of the egg and the vanilla.
Beat into the butter mixture.
Sieve flour and bakingpowder in.
Mix briefly, until combined.
Roll the dough in cling film.
Allow the dough to rest in the refrigerator for an hour, meanwhile place waxed paper on the baking tray
Knead the dough briefly.
Roll the dough to 1cm thickness.
Cut out squares.
Place the biscuits on the tray.
Put the biscuits back in the fridge for another 15 minutes then preheat the oven to 170°C
Slide the biscuits into the oven.
Bake the biscuits in 10-12 minutes lightbrown
Allow to cool 5 mins on the baking tray.
Transfer the biscuits to a wire rack and allow to cool completely
Meanwhile make the glaze
Put icing sugar, lemon and water in a bowl.
Stir it all together until it is a smooth glaze.
Stir in drops of colouring until it has the right colour.
Spread the glaze on the biscuits using a palette knife.
How to make Endermen
Roll black icing fondant thinly.
Cut out squares.
Cut out strips.
Also cut a pink strip then cut all the strips into small squares
Stick the black squares on the remaining, uncovered biscuits.
Make faces on the Creepers and the Endermen with the cubes.
Have fun with the biscuits!
