1 kilo organic apples
4 tablespoons caster sugar
1 teaspoon cinnamon
1 lemon, juice only
4 free range organic eggs (M)
250g self-raising flour
1 teaspoon vanilla powder
250 ml olive oil
2 tablespoons caster sugar
1 teaspoon cinnamon
In this Hanukkah weekend we bake a lovely apple cake or apple pie, whatever you want to call it. The soft cake with the apple slices inside tastes so good and even though we start eating it today, there is still enough for tomorrow. Light the candles and enjoy a delicious treat, happy Hanukkah!
How to bake a Hanukkah apple pie
Start with washing the apples, even though they are unsprayed / organic still wash well then divide the apples in two bunches
Peel one half but slice all the apples.
Toss the peeled half with lemon juice and cinnamon.
Grease the springform generously with butter.
Put the sugar and the eggs in the mixer and beat.
Then beat in the olive oil.
Now the mixture looks thick and pale.
Add the self-raising flour and vanilla.
Fold it into the mixture until you have a thick, smooth batter.
Pour the batter into the greased spring form.
Tilt the spring form until the batter is even.
Divide the peeled appel slices all around over the batter.
Stir 1 teaspoon cinnamon into 2 tablespoons sugar.
Sprinkle the cinnamon sugar evenly over the apples.
Bake the apple pie in 1¼-1½ hour golden and cooked.
DO MIND! If your apple pie browns too much too quickly then cover it with aluminum foil
Stick a wooden skewer in the middle of the cake, if the skewer comes out clean your cake is cooked
Allow the cake to cool in the spring form.
Serve the cake at room temperature, optional with whipped cream.
