100g basil leaves
lots of ice!
25g pine nuts
1/8 garlic clove
pinch of salt
75ml extra virgin olive oil
1 ice cube
25g Parmesan
15g Pecorino Romano
This great basil/pesto recipe is made with cheese, punchy Italian cheese with a salty taste. That is what makes this pesto extra tasty!
How to make the basil pesto
Weigh and wash the basil leaves.
Bring a pot of water with some salt to the boil.
Blanche the basil in the hot water for 1 - 2 minutes.
Cool the basil immediately in a big bowl of ice water.
Allow the basil to drain well.
Blend the basil smooth with 1 ice cube.
and with pine nuts, oil, garlic and salt.
Grate both cheeses.
Stir both cheeses quickly into the pesto.
Ready, de pesto looks beautiful and tastes delicious!
