350g blueberries
350g red currants
300 gram blackberries
2 tablespoons lemon juice
1000g fruit sugar
There are a number of things we really love to make and one of these is jam. Today for the last time this year we make forest fruit jam. tomorrow is Miachelmas. On Saturday morning, first thing we're going to do is buy lots of fresh fruit on the market and then into the kitchen we go!
How to make the best forest fruit jam
Strip the red currants from the stalks.
Wash all fruit, let it drain well.
Weigh the clean fruit then place in a large pan.
Stir in preserve sugar, place the pan overnight in the fridge.
Next morning stir the fruit and sugar again.
Let the fruit boil firmly for 4 minutes, turn off the heat.
Remove the foam on top of the jam with a slotted spoon.
Pour the jam in the jars, fill the jars to the edge.
Screw on the lids, place the jars 5 minutes upside down.
Turn the jars back and let them cool completely. Store the jam in a cool dark place.
