2 large free range eggs
60g green cabbage
60g tomatoes
15g red onion, chopped
salt and black pepper, to taste
vegetable oil, to fry in
1 Chapati
optional: a green chili pepper, chopped finely
As promised yesterday today on Snazzie the recipe for Rolex, the African topping for Chapati. The colours of the dish call out to us: eat me! The Chapati with Rolex tastes über delicious!
How to make Ugandan Rolex
Wash and chop the tomatoes.
Peel then chop the onion.
Cut then wash the cabbage.
Whisk the eggs.
Allow all the vegetables to dry well on kitchen paper.
Stir the vegetables into the eggs, season with salt and pepper to taste.
Heat the oil, spoon the egg mixture in the pan then spread it in a circle.
Flip the Rolex when the egg is almost set then place the Chapati on top.
Allow the Chapati to warm on the egg, flip it for a minute if neccesary.
Slide the Rolex from the pan on to a heated plate.
Top the Rolex optional with the finely chopped green chili pepper
On the streets of Uganda the Rolex is served rolled up, in a bit of newspaper. At home we like to eat it open, on a plate ;)
