Shopping list for 12 cupcakes
250g caster sugar
250g butter (room temperature)
3 free range organic eggs (room temperature)
1 teaspoon vanilla essence
250g self-raising flour, sifted
4 tablespoons milk
fondant icing, in various colours
For Diwali we bake cupcake, decorated in cheerful, fun colours. Of course the way they like them best, with lots of vanilla and fondant. We use half of the recipe, for 6 cupcakes, that seems more than enough for them :))
How you make our Diwali Cupcakes
Mix the butter with the sugar.
Mix in the eggs, 1 by 1.
Mix in the vanilla extract.
Weigh the selfraising flour.
Sift the flour in parts in the butter mixture.
Fold in the self-raising flour.
Add the milk and fold it in.
Preheat the oven to 180°C and place paper cupcake cases in the baking tin
Spoon the batter into the paper cases up to 3/4.
Slide the baking tin into the middle of the oven.
Bake the cupcakes in 20 - 25 minutes golden brown.
Allow to cool first in the tin then completely on a wire rack.
Allow the cupcakes to cool completely, meanwhile make the fondant icing Diwali decorations
Roll fondant icing and cut out circles.
Cut the top of the cupcakes straight.
Stick the circles on top of the cupcakes.
Cut various shapes out of fondant icing.
Stick the shapes on the cupcakes, sprinkle with glitter.
The Diwali cupcakes look almost too pretty to eat!
