3 free range organic eggs
60g fine sugar
80g plain flour
½ teaspoon baking powder
3 sheets of gelatin
500 strawberry yogurt
100g fresh strawberries, pureed
extra strawberries, to decorate
some edible flowers flowers
After the success of our Harry Potter Reading Marathon, we really enjoy doing the same with fairy tales. So this month you will meet all kinds of old acquaintances again, Thumbelina is the first. After the book and the doll we bake cake with her today and it will be a very special one!
How to make Thumbeline's cake
Start with the preparations
Grease the baking tin lightly, put in waxed paper.
Fill a large pan with hot water, to make a water bath.
Wash the strawberries, remove the crowns.
Puree the strawberries in the blender.
Place a big bowl into the water bath.
Put the eggs and the sugar in a big bowl.
Mix until airy and pale.
Sieve flour and baking powder into the bowl.
Fold it all together.
Pour the batter into the mold.
Bake the cake for ± 15 - 20 minutes.
Allow the cake to cool.
While the cake is cooling you make the topping
Put 100g of the yoghurt into a saucepan and put it on low heat.
Add the gelatin.
Stir until the gelatin is dissolved.
Stir in the rest of the yogurt.
Spread the strawberry puree on top of the cake.
The yogurt topping on top.
Place the cake 2 hours in the freezer.
Cut the cake into pieces.
Square pieces for maxi-monsters.
into smaller rectangles for mini-monsters.
and in tiny squares for the baker herself of course!
