375g plain flour
225g caster sugar
225g unsalted butter (room temperature)
1 free-range egg (room temperature)
1 sachet of vanilla sugar
1 teaspoon baking powder
75g icing sugar
a few drops of lemon juice
1½ tablespoon water
food coloring
a small cube of chocolate
Today it is very cold! After school Madelief wants to bake Snowmen and she already has an idea of how she is going to do it. All she needs is a round cookie cutter, then she will be quickly ready. Very smart, to design your own cookie! This recipe makes 15 - 20 Vanilla Snowmen Biscuits.
How to make Madelief's Snowmen
Pour sugar and vanilla sugar into a big bowl.
Add the soft butter and mix until creamy.
Add the egg and mix it for another minute.
Sieve in flour and baking powder in parts then mix it in.
Mix the dough until you have big crumbs then quickly knead it smooth by hand. Wrap the dough in cling film, put it in the refrigrator for 1 hour.
Preheat the oven to 175°C
Place the dough between parchment and roll it to 1.5 cm thickness.
Cut circles out of the dough using a cutter or a small glass.
Flatten the biscuits, press two circles together like a snowman.
Bake the biscuits for 10 minutes, allow them to cool on the baking paper on a rack.
Make white icing: sieve the icing sugar and stir in lemon juice and water.
Spread white icing on the snowmen and let it dry thoroughly.
Divide the remaining icing over two egg-cups and stir in the food colouring.
Madelief makes coloured scarfs and chocolate faces on the snowmen.
The snowmen look so cute and they taste super yummie!
