Magnolia syrup
450 gram demerara sugar
800 ml of water
1 lemongrass stalk,chopped into coarse pieces
50g ginger, unpeeld, washed and in piece
the zest of ½ organic lime, cut into pieces
a handful of magnolia leaves, shredded
You need this as well:
a sterelized 1L bottle
a piece cheesecloth
Today we make a very special syrup with a recipe and all organic supplies from Ekoplaza. You can only make this syrup in early spring, when the magnolia is blooming. So that's what we do, we make magnolia lemonade syrup.
Lastly an important warning! Use only unsprayed magnolia leaves, for example from your own garden
How to make magnolia syrup
Put the water and the demerara sugar in a pan.
Add the lemon grass, lime and ginger.
Boil the mixture for 20 minutes, or until the sugar has dissolved.
Allow the syrup to cool for 15 minutes.
Tear the magnolia leaves into pieces.
Add the leaves to the syrup in the pan.
Stir the magnolia leaves into the syrup.
Let the magnolia syrup rest for at least 12 hours, in the refrigerator
Place the cheesecloth in a sieve and pour the syrup through it.
Pour the sifted magnolia syrup in a sterilized, closeable bottle.
Pour a layer of syrup into the glasses and add some icecubes.
Top it up with sparkling water and happy Spring!
Stored in the refrigerator, the Magnolia syrup will last for about 3 months!
