Shopping list for 2 persons
250g fresh salmon
1 red onion
50g chestnut mushrooms
handfull of fresh baby spinach
60g cream cheese (Philadelphia light)
60g fresh pineapple
2 teaspoons Dijon mustard
2 teaspoons clear honey
1 teaspoon chives, finely cut
1 spring onion, finely cut
sea salt & freshly ground black pepper
2 Italian buns (bake at home)
optional: lemon wedges & tomato
Healthy and delicious with very few calories: a grilled salmon burger with a mustard honey and fresh pineapple dressing.
How to make the fresh Salmon Burgers
Clean the pineapple then cut 60g in fine chunks.
Stir pineapple, mustard, honey, onion & chives into the cheese.
Season the dressing to taste with salt and pepper.
Cut the buns in half then spread on clean baby spinach.
Grill the salmon with the sliced mushrooms and onion.
Bake the fish until char stripes on both sides appear.
Divide the mustard - honey dressing over the spinach on the buns.
Place the salmon, onion and mushrooms on top.
Stick on the top of the bun with a skewer.
Serve the burgers with spinach and tomato wedges on the side
