Shopping list
1 cucumber
3 cloves garlic, crushed
1 tablespoon rice vinegar
1 tablespoon light soy sauce
1 teaspoon fine sugar
½ teaspoon salt
1 teaspoon sesame oil
some green onions, finely sliced
Our Chinese New Year's menu turned out to be quite sweet so we thought it a good idea to add a fresh and spicy side dish. Cucumber is always good if you are looking for a fresh bite and this salad has actually everything we were looking for.
How to make this Chinese Cucumber Salad
Scrub the cucumber clean and dry it with paper kitchen towel.
Slice the cucumber slanted then place it in a bowl.
Press the garlic and fold it in gently.
Mix the vinegar with soy sauce, sugar, salt and sesame oil.
Fold the dressing just before serving into the salad.
Sprinkle spring onions over the salad and serve immediately.
