A Posh Picnic Sandwich

with crayfish

Shopping list
100g crayfish
½ lime, juice only
1 tablespoon of flat-leaf parsley, finely chopped
1 spring onion, cut into rings
handful of mixed lettuce
2 sandwiches, toasted

for the sweet and sour cucumber (optional)
1 tablespoon of sugar
1 tablespoon of rice vinegar
½ cucumber
sea salt

for the sauce
½ tablespoon of mayonnaise
½ tablespoon of yogurt
a splash of soy sauce
sea salt and freshly ground black pepper
½ teaspoon Thai chili sauce, optional

Another hit in our picnic basket is the Posh Crayfish Sandwich. Truly very delicious! This sandwich must be taken really well cooled, so directly from the refrigerator into the cool box, because you don't want to take any risks with fish! Do not leave it in the cooler for half the day either, but eat it as soon as possible.

How to make the Posh Crayfish Sandwich
Mix the lime juice with the crayfish and allow it to marinate for 10 - 30 minutes.

How to make the sweet-sour cucumber

Scoop the center out of the cucumber, sprinkle with salt.

Put the cucumber aside 10 minutes then rinse it well.

Stir the sugar with the vinegar and 1 tablespoon of water.

Slice the cucumber and mix it with the dressing.

How to make the sauce

Mix the ingredients together then stir in the crayfish.

Season with sea salt and pepper, if it is needed.

How to make the sandwich

Wash and dry the lettuce, parsley and tomatoes.

Mix the salad with the onion, parsley and tomatoes.

Bake the bread golden brown in a toaster.

Place half of the the salad on each bread slice.

Place half of the crayfish on each sandwich.

Top it with a fourth of the cucumber and your posh sandwich is ready.

Serve the rest of the cucumber on the side, enjoy!
