Shopping list for two
1 chicken breast 150 - 200g, sliced
sea salt & freshly ground pepper
4 slices of bread
50g mixed lettuce
2 spring onions, finely sliced
2 tomatoes, sliced
1/2 avocado, sliced
50g bacon
2 free range eggs
some chives, cut finely
mayonnaise to taste
butter to fry in
On a lazy Sunday at home you can take your time to fully enjoy this sturdy, homemade club sandwich. With all the fresh ingredients you make everybody happy.
How to make a club sandwich
Fry the chicken, it should be cooked but not dry.
Fry the bacon in the same pan, until crispy.
Spread butter on both sides of the bread slices.
Bake the bread on both sides on the griddle.
Fry two eggs with runny yolks.
Spread mayonnaise on the bread.
Pile on lettuce, onion, tomato and avocado.
Top it with bacon.
Then chicken en chives.
Finaly the fried egg.
Cover it with the second slice.
Cut the bread in half, stack it then stick in a Spanish tapas pricker.
The boys enjoy Sunday lunch, it's back to school tomorrow!
