100g caster sugar + 30 ml water
15ml whole milk
175 ml double cream
2 organic eggs + 1 egg yolk
1 vanilla pod
You also need
4 ramekins
a deep oven dish
You need 4 ramakins and a deep oven dish.
Put water and sugar into a saucepan and put it on.
Wait for the sugar to colour nicely brown, do not stir!
Divide the caramel over the bottom of the ramekins and let it cool.
How to make the pudding
Preheat the oven to 160°C
Scrape the seeds out of the vanilla pod.
Put it in the milk and bring it close to the boil.
Beat the sugar with the eggs.
Leave the milk off the heat for 10 minutes and then remove the vanilla pod
Pour the warm milk into the egg mixture.
Whisk both mixtures until they are well combined.
Pour it gently into the ramekins.
Fill the oven dish up to 2/3 with hot water.
Bake the puddings nicly brown in +/- 15 minutes
Let the pudding cool comepletely.
Gently slide a knife around the edge.
Put a plate on top of the mould.
Flip the plate together with the mould.
Maybe the mould needs a little tap ...
There is your French Flan pudding! Enyoy!
