160g patent flour
110g cold butter cubes
1¼ teaspoon caster sugar
¼ teaspoon sea salt
1½ teaspoons cornstarch
4 – 6 tablespoons ice water
some fine sugar, for sprinkling
Stuffing
4 fresh, ripe peaches
60g caster sugar
1½ teaspoon corn starch
2 tablespoons melted butter
Before the peach is out of season, we would like to bake a very tasty French pie with it, the galette aux pêches. This pie is not difficult to make, but you have to make some time. We are happy to do so!
How to make a Peach Galette
Put the butter cubes with flour and sugar in a bowl.
Mixing the ingredients all together using your hands.
Add ice water by the tablespoon while kneading.
Do not overwork the dough, knead it untii just combined
Wrap the dough in clingfilm.
Place it in the refrigerator for 1 hour.
Meanwhile peel the peaches.
Remove the pits and cut the peaches into neat slices, organic peaches do not need to be peeled
Sift sugar and cornstarch over the peaches,
Pour the melted butter over the peaches and toss.
Fetch the dough and roll it out.
Arrange the peaches in a circle on the dough.
Fold the dough over the filling, brush with egg.
Sprinkle the edge generously with sugar.
Bake the galette in +/- 45 minutes golden and cooked.
Let the galette cool on the baking tray for a moment
The galette can be served with whipped cream on the side.
But serve the peach galette immediately,
The pie tastes great with tea or coffee
