A fresh Halloumi Salad

Shopping list
2 tablespoons Harissa paste
2 lemons
250g Halloumi
1 small red onion, finely chopped
2 vine tomatoes, finely chopped
½ cucumber, finely chopped
2 tablespoons olive oil
1 tablespoon wine vinegar
250 gram Greek Yoghurt, 0% fat
3 tablespoons mint leaves, finely chopped
small handful rocket leaves
sea salt and freshly ground black pepper

Halloumi salad is a very tasty, summery salad with lots of fresh vegetables and cheese. Easy to make and quick to prepare. The Middle Eastern touch comes from the Harissa paste, we chose the mild version, and the yogurt. If desired, you can serve the salad some fresh bread.

How to make a Halloumi salad

Put 1 tablespoon Harissa in a bowl.

Add the juice of 1 lemon.

Stir until combined.

Cut the cheese into slices.

Brush the mixture on the cheese.

Pour the remaining mixture on top of it.

Cover the bowl with cling film.

Let the cheese marinate for 10 - 15 minutes in the refrigerator.

How to prepare the vegetables

Wash, peel and chop the cucumber, tomatoes, onion and the fennel bulb finely.

Season the vegatables with oil, vinegar, salt & pepper.

Allow the flavours to blend for 10 minutes in the fridge.

How to make the yogurt sauce and the salad

Mix the yogurt with harissa and lemon.

Stir in the mint, put aside for a moment.

Greas the skillet with oil and fry the cheese golden.

Put the yogurt sauce on a plate and top with theHalloumi.

Sprinkle the vegetables over the cheese.

Finally spread the rocket salad on top of the Halloumi salad.
