175g gingernut biscuits
50 gram soft, unsalted butter
Filling
200g white chocolate
300g cream cheese
300 ml double cream
1 teaspoon lemon juice
1 teaspoon vanilla extract
optional: icing sugar and red currants
a 20 cm springform
For Father's Day we make a cheesecake that you don't have to bake. This recipe is by Nigella Lawson and she does not mind the calories - this cheesecake is very rich - but the Dad and Granddad in our snazzie family loves it! Please mind! This recipe needs a night in the fridge to set.
How to make the white chocolate cheesecake
Preparations
Melt the chocolate au bain marie on boiling water, removed from the heat.
Blitz the biscuits in the food processor into fine crumbs.
Melt the butter on a very low heat, allow the chocolate to cool.
How to make the base
Stir the butter into the crumbs until they stick.
Grease the springform, clamp waxed paper on the bottem.
Press the biscuit crumbs in the springform with a spoon.
Place the springform in the refrigerator for now.
How to make the filling
Get the cooled, still liquid chocolate.
Stir the cream cheese then add the chocolate.
Fold the chocolate into the cheese.
Gently whip the cream until you get soft peaks.
Fold the whipped cream in the cheese-chocolate mixture.
Fold vanilla and lemon juice into the chocolate filling.
Spoon the filling into the form then cover it with cling film.
Place the springform overnight in the fridge so the filling can set.
Next day: sieve a thin layer of icing sugar on top of the cake.
